As promised in the tutorial, I have linked some good pen tool tutorials below - I've looked at all of them and think they're good for learning how to use this miraculous tool.

Sorry, I don't get it? When I choose pen tool in photoshop, with freeform, i can't select any brush options. It just draws an editable path (no actual paint) and that's it. I can't select simulate pressure or anything, the whole brush menu is gray. Anyone know what the correct pen tool options are / how to adjust the brush and actually apply paint?

When you use the freeform pen tool, or any pen tool options, you'll need to draw the path first and then right-click and choose 'stroke path' which is where you get the option to simulate pressure. You can't choose the brush options while the pen tool is selected, you have to choose those options first, then draw your path, then stroke-path, delete path and repeat the process.

Hope that helps - sorry the tutorial was unclear for you, it does say that 'basic pen tool knowledge is required', so. :)

I'm going to work on this as soon as I finish College final works, I hate to stop doing something due to inertia (if I break the rhythm it takes forever to leave idleness behind e_e).
